INGREDIENTS

  • 2 1/2 cups all-purpose Gluten Free flour (Cup 4 Cup)
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup butter, room temperature
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup jam such as raspberry, strawberry, or apricot
  • Confectioners' sugar for dusting

 

Directions:

 

 

 

Preheat oven to 350 degrees

 

Beat butter and sugar until light and fluffy.  Add egg and vanilla, beat

until combined. Add flour, baking soda, and salt. Mix until it forms a

dough. Wrap dough in plastic wrap and let chill for 1 to 24 hours.

Roll dough into 1 inch balls, arrange on cookie sheet 3 inches apart.

Press thumb into center of the ball to make a well. Add jam to the

well, be careful not to over fill. Bake until golden brown, about

15 minutes. Cool cookies on cooling rack for 10 minutes, then dust

with powdered sugar.
